We use traditional medieval style spit roast cooking methods using indirect heat from seasoned wood and charcoal. This method of roasting and smoke curing gives the meat a unique flavour that cannot be replicated by sealed units powered by LPG.
Our methods of roasting and basting ensure that the meat remains succulent and full of flavour.
We use lump wood charcoal produced in the Alkham Valley and at Acrise. Our seasoned wood comes from managed and sustainable local woodlands and comprises mainly of Beech, Hazel, Ash and Oak.
Our fully adjustable double spit roasting frame can accommodate a whole Pig on one side and a combination of Pork, Lamb, and Beef joints or poultry on the other.
The top rail can be used for smoke curing fish, slow cooking kebabs and warming pots of traditional home made sauces.
We also have a 6m x 3m 'Zapp' Canopy which can be used to serve your roast and accommodate other catering requirements . Please enquire at time of booking and add some real style to your outdoor event.
